Line a baking sheet with parchment and pre-heat oven to 400F
Place whole chicken on parchment lined pan and drizzle with oil (or rub
with ghee) and roast for about 20 minutes, or until the skin has
achieved a nice golden brown
Remove chicken from over and place in a large stock pot and barely cover with water, add salt, pepper, 2 bay leaves and a whole head of garlic cloves, peeled
Simmer over low heat for 2 hours, uncovered, adding a little water as needed
Enjoy straight as is with a grating of parmigiana or a crumbling of
queso fresco, or pull the chicken off the bone and use for tacos, soup or other recipes!
