Beef Kofta Kebabs

Ingredients: 2 lb 85/15 ground beef; 1 shallot or ½ red onion, grated; 2 minced garlic cloves; ½ t salt; 2 t cumin; ½ c finely chopped parsley; ½ c water

These kebabs are moist and flavorful – they pair perfectly with tzatziki or can be served simply paired with a Greek salad.

Ingredients

2 lb 85/15 ground beef
1 shallot or ½ red onion, grated
2 minced garlic cloves
½ t salt
2 t cumin
½ c finely chopped parsley
½ c water

Directions

Blend all the ingredients on the list above and 2 T of the water in a stand mixer until fully blended.
Shape the mixture around long kebab skewers – either flat metal ones or pairs of bamboo or wood skewers – using a pair of them will make the kebab easier to flip. Use about 1 cup of meat per skewer to make a large oblong log. You should be able to make 4-8 kebabs depending on how long the skewers are. Take the remaining water and rub on the exterior of the kebab to make extra smooth.
Cook on a hot grill, turning every 2-3 minutes, for 8-10 minutes until exterior of the kebab is browned.
