In your blender or food processor, combine flour, eggs, yeast, buttermilk and salt; blend to combine
Cover batter and set aside for approximately 1 hour to allow yeast to activate. Heat a cast iron skillet to medium-high heat and add your preferred cooking fat to the pan (we like grass-fed butter or lard for this!)
Ladle about ¼ cup batter into your hot, oiled skillet and swirl the batter to distribute Cook for about 2 minutes on first side, until edges begin to curl and crepe is golden brown underneath
Flip and cook for one more minute on the other side
Sprinkle fillings generously into cooked crepe, fold and continue to cook (at a reduced temperature) until cheese is melted and fillings have combined
Slice and serve warm, sprinkled with fresh herbs if desired
