The Perfect Sauce for Lean Meats

INGREDIENTS

  • 1 ½ cups packed parsley leaves

  • 4 garlic cloves, coarsely chopped

  • 2 tablespoons packed oregano leaves

  • 1 ½ tablespoons rosemary leaves

  • 1 tablespoon thyme leaves

  • 1 bay leaf

  • 1 teaspoon crushed red pepper

  • ¾ cup extra-virgin olive oil

  • 1/3 cup sherry vinegar

  • Kosher salt

  • Freshly ground pepper

STEP-BY-STEP

  • 1. In a food processor, combine all of the ingredients, pulse until the herbs are roughly chopped.
  • 2. Season the chimichurri with salt and pepper and transfer to a bowl.
  • 3. Let stand at least one hour before serving.
