Ingredients
DRESSING
2 T tamari
3 T rice vinegar
1 T sesame oil
2 T olive oil
Splash of maple syrup
1 T grated ginger
1 garlic clove, grated
1/2 tsp black pepper
SALAD
4 c shredded Chinese cabbage
1 1/2 cups red cabbage
1 cup carrot , grated
2 cups cooked chicken breast, thinly sliced
1/2 cup shallots / scallions , finely sliced
1/2 to 1 cup crunchy noodles – buy these premade or deep fry cellophane noodles to make your own
1 T Sesame seeds
Directions
Whisk together dressing ingredients.
Combine all vegetables and shredded chicken and toss with dressing.
Top with crunchy noodles and sesame seeds.
