Tuscan Chicken & Pasta Soup
An easy and healthy weeknight soup!
Ingredients
4 cups Belcampo Poultry Bone Broth
1 cup dried pasta
2 thinly sliced raw chicken breasts
4 carrots, peeled and diced
2 cups chopped lacinato kale or mustard
1 bunch scallions, minced
Directions
Pour chicken broth into a sauce pan and bring to a simmer, add pasta, cover and cook 5 minutes
Add raw chicken and carrots to pasta and broth, cover and simmer and additional 5 mins
Add greens, scallions and any other herbs you would like, salt to taste, cover and let rest for 3 minutes
Serve each bowl topped with a tablespoon of fresh extra virgin olive oil and a grating of hard cheese
