The night before cooking your ribs – remove the membrane from the ribs and evenly coat with mustard. Apply mixed spices and return to the fridge, uncovered if space allows.
Prepare your grill for offset grilling. Heat to 225F.
Place the ribs on the grill, rib side down, and cook for 3 hours.
After 3 hours, remove the ribs from the grill and glaze with your favorite BBQ sauce. Wrap in aluminum foil.
Return the ribs to the grill, meat side down, and continue to cook.
Cook for another 1-2 hours, or until the ribs have reached an internal temperature of about 205˚F.
Remove the wrapping from the ribs and return to the grill for 10 minutes.
