Combine all ingredients, except skirt steak, in a mixing bowl. Allow everything to dissolve.
2Add skirt steak to the marinade and allow to rest for at least 12 hours before cooking.
3Preheat grill to 475-550˚F
4Remove beef from marinade and transfer to a tray, lined with a resting rack. Allow excess marinade to drip off.
5Place the meat on the grill and close the lid. Cook for 4 minutes, or until it has browned.
6Flip the beef and cook for 4 more minutes on the other side.
7Cook the beef to desired doneness. We recommend medium-rare, 125˚F
8Remove from pan and rest for 5 minutes before slicing
