Place the drumsticks on a sheet pan lined with parchment paper and place in the oven. Bake for 45 minutes, turning once halfway through cooking.
While the drumsticks are cooking, heat a cast iron or heavy skillet on the stovetop on high heat. Add one tablespoon of ghee, suet or another high-heat cooking oil. Sear the breasts on both sides until deep brown, then turn down the heat and cook on medium until the breasts are fully cooked – about 10 minutes total.
Remove the breasts from the pan and slice into 5 slices each. Place on a platter and add the cooked drumsticks. Garnish with fresh lemon slices and chopped herbs.
