Ingredients: 2 cups cooked chicken; 1 cup creme fraiche; 2 cups Belcampo Original Bone Broth (or homemade); 3 tbs tomato paste; 1 tsp mild chili powder; 1 tsp cumin; 1 tsp dried oregano; splash of sherry vinegar; salt + pepper to taste; Corn, flour or keto tortillas; Shredded cheese (we used oaxaca for this dish)

Belcampo Chicken Enchiladas

Ingredients

2 cups cooked chicken
1 cup creme fraiche
2 cups Belcampo Original Bone Broth (or homemade)
3 tbs tomato paste
1 tsp mild chili powder
1 tsp cumin
1 tsp dried oregano
splash of sherry vinegar
salt + pepper to taste
Corn, flour or keto tortillas
Shredded cheese (we used oaxaca for this dish)

Directions

Mix cooked chicken with creme fraiche
Combine Belcampo Bone Broth,tomato paste, chili powder, cumin, dried oregano & sherry vinegar and simmer until your desired cosistency
Roll chicken mixture into tortillas and place in baking dish
Cover with sauce and shredded cheese
Bake at 375F for approximately 40 minutes, until golden and bubbling
