This is a surprisingly simple dairy and egg free creamy dressing that packs a healthy punch for your summertime cooking.
Ingredients
1 Head Red Cabbage
2 Golden Beet, Peeled
2 Carrots, Peeled
2/3 cup Extra Virgin Olive Oil
2/3 Cup Nutritional Yeast
1/3 Cup Lemon juice
2 Tablespoon Kosher salt
Directions
Cut the cabbage into sixths, remove the core, and on a food processor with the slicer attachment, slice the head. Put the grating attachment onto the food processor and grate the beets and carrots.
Whisk together the oil, yeast, lemon and salt and toss with the prepared vegetables. Let rest for at least 30 minutes before serving.
