Smash burgers take the guess work out of burger making and are a favorite for people who love a crispy thin patty. This burger works perfectly with Belcampo’s 85/15 grind.
Heat a cast-iron pan or other large heavy skillet over medium-high until very hot.
While your pan is heating, divide ground beef into 4 equal portions (do not form patties).
Place portions on pan and smash flat with a spatula to form 4"-diameter patties. Do not worry if they are uneven.
Season liberally with salt and cook, undisturbed, until outer edges are brown, about 2 minutes. Flip patties, season with salt, and place a slice of cheese on top of each patty.
Cook until cheese softens and burgers are medium-rare, about 1 minute.
