Place 1 lb ground pork and 1 lb
ground beef in a large heavy-bottomed saucepan – no fat is needed in the
pan, the meat will render out sufficient fat for cooking
Sear the ground meat on high heat for 3 mins on each side so there are
pieces of nicely browned meat – this will add consistency and flavor to
your sauce
Finely mince one medium onion and add to the browned meat, lower and cook 5 mins
Add 1 cup organic tomato puree and 1 cup chicken bone broth
Season with 2 bay leaves, 1 sprig rosemary, 1 teaspoon sherry or red wine vinegar and salt and pepper to your liking
Cover and simmer on low heat 90 mins
Uncover and simmer on low heat for an additional 60-90 mins, breaking
the meat into fine small pieces with a spoon – slightly mashing it into
the pan as it softens with cooking
